The invention concerns an ice confectionery product, in particular moulded based on water ice having a soft core texture, comprising: (i) a water ice core containing 20 to 40 wt. % of solids, overrun in a proportion of 20 to 80 % and whereof the texture is similar to that of an extruded ice cream, containing as the case may be chunks and (ii) a non-swollen water ice shell containing 20 to 35 wt. % of solids.

L'article de confiserie glacée, notamment moulé à base de glace à l'eau de texture tendre à coeur, comprend: (i) un coeur de glace à l'eau contenant 20 à 40 % en poids de matières sèches, foisonné à un taux de 20 à 80 % et dont la texture est semblable à celle d'une crème glacée extrudée, contenant le cas échéant des morceaux et (ii) une coque de glace à l'eau non foisonnée contenant 20 à 35 % en poids de matières sèches.
