An ice-containing product is provided which comprises at -18~C, (i) a first population of frozen particles, which first population consists essentially of frozen edible particles, or a mixture of frozen edible particles and ice particles, having a particle size of greater than 0.5 mm; and (ii) a second population of ice particles having a mean particle size such that the ratio of the mean particle size for the first population to the mean particle size for the second population is greater than 10 and less than 100, wherein the ratio of the weight of the first population of particles to the weight of the second population is from 2:3 to 9:1 and the first population and second population together provide at least 90% of the frozen particles present in the product. A process for making such products is also provided.
L'invention concerne un produit contenant de la glace qui comprend, à -18 °C : (i) une première population de particules gelées, principalement constituée de particules gelées comestibles, ou d'un mélange de particules gelées comestibles et de particules de glace, la taille des particules étant supérieure à 0,5 mm ; et (ii) une deuxième population de particules de glace présentant une taille moyenne telle que le rapport taille moyenne des particules pour la première population sur taille moyenne des particules pour la deuxième population est supérieur à 10 et inférieur à 100. Le rapport poids de la première population de particules sur poids de la deuxième population de particules est compris entre 2:3 et 9:1, et la première et la deuxième population représentent au moins 90 % des particules gelées présentes dans le produit.
