The existence of the enzyme defines a gene for methionine N.alpha.-acetyltransferase which may be cloned and altered. Cells expressing the normal or variant forms of this enzyme are valuable tools for determining the amino acid sequence of uncharacterized proteins. Such cells are also valuable tools for expressing a recombinant protein lacking an acetyl group at its .alpha.-amino group.
