A process for the immobilization of an enzyme, comprising the steps: a. selecting an amphiphilic enzyme for immobilization, b. preparing an emulsion comprising a continuous hydrophobic phase and a dispersed aqueous phase which aqueous phase contains the enzyme and material suitable to act as carrier for the enzyme when the next step is carried out, which material is partly dissolved and partly not dissolved in the aqueous phase, c. removing water from the dispersed phase until this phase turns into solid enzyme coated particles. A suitable aqueous phase may be prepared with a crude lipase fermentation liquid which includes inactivated biomass suitable to act as carrier. Processes which use the immobilized enzyme comprise ester re- arrangement, acidolysis and deacidification of edible triglyceride oils. These processes have a very low enzyme consumption.

L'invention concerne un procédé d'immobilisation d'une enzyme comprenant les étapes suivantes: (a) sélection d'une enzyme amphiphile à immobiliser, (b) préparation d'une émulsion renfermant une phase hydrophobe continue et une phase aqueuse dispersée, ladite phase aqueuse contenant les enzymes et le matériau appropriés pour faire office de support de l'enzyme lors de l'étape suivante, lequel matériau est partiellement dissous et partiellement non dissous dans la phase aqueuse, (c) élimination de l'eau de la phase dispersée jusqu'à ce que cette phase soit composée de particules solides enrobées d'enzymes. On peut préparer une phase aqueuse appropriée avec un ferment lipolytique brut renfermant une biomasse inactivée appropriée pour servir de support. Les procédés utilisant l'enzyme immobilisée comprennent l'interestérification, l'acidolyse et la désacidification d'huiles triglycérides alimentaires. Ces procédés consomment très peu d'enzymes.
