This invention relates to a casing (10) for use in encasing meat products. The casing (10) comprises a combination of a first tubular casing (11) which may comprise a fibrous casing material and a knitted tubular net (12) located around and substantially concentric to the first tubular member (11). The tubular net (12) comprises circumferential elastic cords (13) and longitudinal cords (14), and the relative diameter of the circumferential cords (13) to the first tubular casing (11) are such that when the casing (10) is being filled the circumferential cords (13) are placed under tension prior to the first tubular casing (11) reaching its maximum diameter. This enables the circumferential cords (13) to absorb some of the hoop stress before it is applied to the first tubular member (11) thereby preventing splitting of the first tubular member (11) which might otherwise occur without the tubular netting (12). The specification also discloses a method of shirring the casting (10) to an injection nozzle (16) which enables even spacing of the tubular net (12) around the first tubular casing (11) as the casing (10) is drawn from the injection nozzle (16). The method involves inflation of the casing (10) prior to shirring onto the injection nozzle (16).

Cette invention concerne un boyau (10) destiné à être rempli avec des produits carnés. Le boyau (10) est constitué d'un premier tube qui peut être en un matériau fibreux (11) et d'une enveloppe tubulaire externe (12) constituée de mailles. Ces deux éléments sont sensiblement concentriques. L'enveloppe tubulaire (12) à mailles comprend des fils élastiques circonférentiels (13) et des fils longitudinaux (14). Le diamètre des fils circonférentiels (13) comparé au diamètre du premier tube (11) est choisi de manière à ce que, lors du remplissage du boyau (10), les fils circonférentiels (13) soient mis sous tension avant que le premier tube (11) n'atteigne son diamètre maximum. Ceci permet aux fils circonférentiels (13) d'absorber une partie de la contrainte périphérique, avant qu'elle ne s'exerce sur le premier tube (11). On évite ainsi que le premier tube (11) ne se fende, comme cela risquerait de se produire en absence de l'enveloppe tubulaire (12) à mailles. L'invention concerne également un procédé de fronçage du boyau (10) sur une buse d'injection (16), permettant une répartition régulière de l'enveloppe tubulaire (12) à mailles autour du premier tube (11) lorsque le boyau (10) est tiré de la buse d'injection (16). Dans ce procédé, on gonfle le boyau (10) avant de l'enfiler sur la buse d'injection (16).
