A process for removing digestible fat from a crude reaction mixture comprising nondigestible fat and at least one digestible fat selected from the group consisting of digestible fats having fatty acid chains, comprising the steps of: (1) treating the crude reaction mixture with an aqueous solution comprising lipase at a pH sufficient to obtain soaps from the fatty acid chains; and (2) removing the soaps.
L'invention concerne un procédé d'élimination de la graisse digestible d'un mélange réactionnel brut comprenant de la graisse non digestible et au moins une graisse digestible choisie dans le groupe constitué de graisses digestibles possédant des chaînes d'acides gras. Ledit procédé consiste à: (1) traiter le mélange réactionnel brut à l'aide d'une solution aqueuse comprenant de la lipase selon un pH suffisant pour que des savons soient obtenus des chaînes d'acides gras; et (2) enlever lesdits savons.
