A process for making natural and unnatural amino acids which comprises reacting a first amino acid, a keto acid and a transaminase enzyme under conditions appropriate to produce a second amino acid and pyruvate; reacting the pyruvate with acetolactate synthase under conditions appropriate to produce a compound that does not react with the transaminase enzyme and separating the second amino acid.

Procédé permettant de produire des acides aminés naturels et synthétiques, qui consiste à faire réagir un premier acide aminé, un céto-acide et une enzyme transaminase dans des conditions appropriées pour produire un second acide aminé et du pyruvate, à faire réagir le pyruvate avec de l'acétolactate synthase dans des conditions appropriées pour produire un composé qui ne réagit pas avec l'enzyme transaminase, et à séparer le second acide aminé.
