A system for treating meat by the application of a shock wave to the meat while the meat is in contact with a diaphragm which is substantially transparent to the shockwave, confines the meat within a tunnel. In addition, the diaphragm and shock wave generating chamber are preferably disposed above the meat.

L'invention concerne un système de traitement de la viande qui consiste à appliquer une onde de choc à la viande lorsque celle-ci se trouve en contact avec un diaphragme qui est sensiblement transparent à l'onde de choc. Ce système confine la viande dans un tunnel. De plus, le diaphragme et la chambre génératrice de l'onde de choc sont disposés de préférence au-dessus de la viande.
