ABSTRACT OF THE DISCLOSURE: A process for the production of a beer by fermenting a wort, the improvement comprising subjecting the wort prior to fermentation to a separating technique to produce one product lower in fermentable low molecular weight components than the feedstock whilst retaining the other components of the wort in substantially the same concentration as the feedstock and then fermenting that product to produce a beer. And a wort product obtained by subjecting a wort to ultrafiltration.
