In this process for the industrial production of high purity gallic acid from Tara pods, gallic acid is extracted from the tannin-containing material by a one-step extraction-hydrolysis which is carried out in acid medium. Then, the coarse crystals obtained from the extraction-hydrolysis are purified to obtain purified crystals of gallic acid that are dried. This process permits to obtain a product having a purity higher than 99% with an overall yield of more than 30%.

Ainsi, les gros cristaux obtenus de l'extraction-hydrolyse sont purifiés pour obtenir des cristaux purifiés d'acide gallique qui sont séchés. Ce processus permet d'obtenir un produit ayant une pureté supérieure à 99 %, avec un rendement global de plus de 30 %.
