A method for anticipating and for inhibiting the production and ac- cumulation of metabolic products by hydrolytic-fermentative bacteria in an environment. The method has the steps of monitoring for the presence of hydrogen or acetate in an environment and adding a biocide or a non- biocidal electron acceptor to the environment to inhibit bacteria growth and the subsequent production of and the accumulation of bacterial metabolic products in the environment. The method is particularly well suited for inhibiting bacteria growth in a paper mill to prevent the accumu- lation of hydrolytic-fermentative bacteria by-products, especially volatile fatty acids and hydrogen, in paper mill process water and paper product.
