Non-sterile liquids such as fresh milk (and milk products) and fresh fruit juices unfortunately provide an excellent growth medium for micro-organisms, whether aerobic or, like many yeasts and bacteria, "facultatively anaerobic" micro-organisms (meaning that in theory they do not need oxygen for their metabolic processes and yet are not actually poisoned by oxygen, and so can exist in its presence). It has been found, however, that in fact such micro- organisms do seem to require oxygen for some part of their metabolic processes - or, at least, that in a virtually oxygen-free environment their growth is significantly inhibited. Thus, the invention proposes controlling the growth of micro-organisms in non-sterile liquids, such as milk and fruit juices, by the use of an oxygen scavenger to remove virtually all the free molecular oxygen from within the container in which the liquid is stored.

Les liquides non stériles tels que le lait frais (et les produits lactés) ainsi que les jus de fruits frais constituent malheureusement un excellent milieu de croissance pour les micro-organismes, qu'ils soient aérobies ou bien, comme de nombreuses levures et bactéries, "éventuellement anaérobies" (ce qui signifie qu'en théorie, ils n'ont pas besoin d'oxygène pour leurs réactions métaboliques et néanmois ne sont pas réellement empoisonnés par l'oxygène, et peuvent ainsi exister en sa présence). Cependant il a été observé qu'en fait, de tels micro-organismes semblent effectivement nécessiter de l'oxygène pour une certaine partie de leurs réactions métaboliques - ou, du moins, que dans un environnement quasiment dépourvu d'oxygène, leur croissance est notablement inhibée. Ainsi, l'invention propose de réguler la croissance des micro-organismes dans les liquides non stériles, tels que le lait et les jus de fruits, par l'emploi d'un absorbeur d'oxygène destiné à éliminer pratiquement la totalité de l'oxygène moléculaire libre contenu à l'intérieur du récipient de stockage du liquide.
