Modifying the surface of an edible with a high polarity water-based glaze or polishing gum improves the printing of images on the edibles with low viscosity inks typically used in ink jet printing. The methods described herein are suited to printing high resolution ink jet images on edible substrate, such as a hard panned sugar shell confectionery.

Selon cette invention, la modification de la surface d'un aliment comestible pourvu d'un fondant à base d'eau à polarité élevée ou d'une gomme de polissage permet d'améliorer l'impression d'images sur les aliments comestibles au moyen d'encres de faible viscosité généralement utilisées dans l'impression au jet d'encre. Les procédés de l'invention sont appropriés à l'impression d'images au jet d'encre de haute résolution sur ledit substrat comestible, tel qu'une confiserie à coque en sucre dragéifiée dure.
