The invention concerns the use of enzymes derived from insect cells with .alpha.-galactosyltransferase activity for implementing an enzymatic method for preparing .alpha.-galactosyl compounds, said method comprising a step which consists in transferring a galactose residue onto a specific substrate galactose terminal residue. The invention also concerns compounds obtained by said method and their uses in food and pharmaceutical compositions.

L'invention concerne l'utilisation d'enzymes à activité .alpha.- galactosyltransférase provenant de cellules d'insectes, pour la mise en oeuvre d'un procédé enzymatique de préparation de composés .alpha.-galactosylés, ledit procédé comprenant une étape de transfert d'un résidu de galactose sur un résidu terminal de galactose d'un substrat déterminé. L'invention a également pour objet des composés obtenus par ce procédé, et leurs utilisations dans des compositions alimentaires et pharmaceutiques.
