This invention is about an installation to extract and collect the sap through vacuuming from trees and plants and comprises the connection hoses which with one end sealingly join with the cut end of the branches at the superior level of the trees at the proper size and with the other end sealingly join with the first collecting reservoir where the sap is collected and from where the sap will be distributed to the second collecting reservoir through a connection hose under vacuum conditions. The sap collected in this second collecting reservoir is distributed through the vacuum pump in the third collecting reservoir, where is collected all the volume of sap.
