Whey protein is hydrolyzed with hydrolase so that a rate of hydrolysis is preferably 20 to 30 %. A fraction, which has molecular weights above 10,000 daltons, is removed from a resultant hydrolysate by means of an ultrafiltration method to obtain a whey protein hydrolysate which is used as an active ingredient of an interleukin-18 inducer.

L'invention concerne un principe actif destiné à être utilisé dans un agent inducteur de l'IL-18. Il s'agit d'un hydrolysat de protéines lactosériques, dont l'hydrolyse est réalisée au moyen d'une hydrolase visant à donner de préférence un taux de décomposition oscillant entre 20 et 30 %. Dans l'hydrolysat résultant, on élimine par ultrafiltration les fractions dont la masse moléculaire excède 10 000 daltons.
