ABSTRACT The obtention of enzyme preparations having inulinase activity is disclosed. Said preparations are obtained from cultures of Aspergillus phoenicis, preferably the strain CBS 294.80. They posses a high inulinase activity, combined with favorable pH range and lack of inhibition by the substrate inuline or heavy-metal ions. One possible use is in the preparation of fructose from naturally occurring inuline.
