An isolated DNA of a Lactococcus lactis showing a SEQ ID NO:1 encoding a restriction and two modification enzymes (R/M SEQ ID NO:2, 3 and 4). The isolated DNA is used to transform sensitive dairy cultures, such as Lactococcus lactis and Streptococcus thermophilus, to provide phage resistance. Escherichia coli can be used to produce endonucleases.

ADN isolé d'un Lactococcus lactis présentant une SEQ ID NO:1 codant une enzyme de restriction et deux enzymes de modification (R/M SEQ ID NO:2, 3 et 4). On utilise l'ADN isolé afin de transformer des cultures de produts laitiers, telles que Lactococcus lactis et Streptococcus thermophilus, de manière à créer une résistance contre les phages. On peut utiliser Escherichia coli dans le but de produire des endonucléases.
