A composition for preserving solid food products comprising a moisture- sensitive isothiocyanate compound and a hygroscopic carrier, wherein the composition is substantially free of sorbic acid, benzoic acid, and salts thereof. Also disclosed is a solid food product containing the aforementioned preservative composition and a method for preserving solid food products including the steps of adding a moisture-sensitive isothiocyanate to the solid food product and storing the resulting product at a reduced temperature.
La présente invention concerne une composition permettant de conserver des produits alimentaires solides, comprenant un composé isothiocyanate sensible à la moisissure et un excipient hygroscopique ; la composition susmentionnée étant sensiblement exempte d'acide sorbique, d'acide benzoïque et des sels de ceux-ci. Cette invention concerne également un produit alimentaire solide contenant ladite composition conservatrice, ainsi qu'un procédé permettant de conserver des produits alimentaires solides consistant à ajouter un isothiocyanate sensible à la moisissure au produit alimentaire solide, puis à stocker le produit ainsi obtenu à une température réduite.
