- 1 - Abstract The present invention is directed to jams including jellies, preserves, purees, fruit sauces and the like obtained by subjecting a mixture of raw materials to a high pressure treatment without heating. The high pressure treatment is conducted at room temperature and a pressure of 500 to 10,000 kg/cm2 for a period of 1 minute to 30 hours.
