A knife fixture (10) has a plurality of tensioned knife blades (16) for cutting food products. The fixture has a detector system for promptly indicating breakage of a knife blade. In one form of the invention, the detector system allows the blades to be mounted for passage of an electrical current, and for monitoring the current level for abrupt changes indicating blade breakage. In another form of the invention, the detector system includes at least one strain gauge (76) mounted on the fixture to measure the tension force applied to the blades and to permit monitoring of abrupt changes in tension indicating blade breakage. of t
