The invention relates to a knife intended to peel pineapples by removing simultaneously the bark and the knots without any risk of cutting oneself. The knife is comprised of a blade (1) forming an angle (4) which is adapted to the knots or eyes of the pineapple, and of two protections (5 and 6) which are parallel to said blade, and of which the curvature in the form of an arc of a circle corresponds to the curvatures of the scales of the fruit so as to provide for the convenient evacuation of the waste material and for the safety of use.
