The invention concerns lactic acid bacteria which have been provided with a respiratory metabolism, in particular by genetic modifications, such that the expression of at least one gene, either heterologous or homologous, coding for a protein intervening in said respiratory metabolism, is altered. Said bacteria are useful in particular for producing lactic acid ferments.
L'invention concerne des bactéries lactiques auxquelles on a conféré un métabolisme respiratoire, notamment par des modifications génétiques, tel que l'expression d'au moins un gène, soit hétérologue soit homologue, codant pour une protéine intervenant dans ledit métabolisme respiratoire, est altérée. Lesdites bactéries sont utilisables notamment pour la production de levains lactiques.
