The present invention describes a protein having glucosyltransferase activity. This protein is derived from lactobacilli, which are food-grade microorganisms with the Generally Recognised As Safe (GRAS) status. The protein produces a glucan with a unique structure having 4-linked, 6-linked and 4,6-linked anhydroglucose units or in the presence of suitable acceptors, oligosaccharides. According to the invention lactobacilli capable of producing this glucan using the novel glucosyltransferase can be used as a probiotic or symbiotic.

L'invention concerne une protéine présentant l'activité de glucosyltransférase. Cette protéine est dérivée de lactobacilli, lesquels sont des micro-organismes alimentaires ayant le statut de Généralement Reconnus Inoffensifs (GRAS). Cette protéine produit un glucane avec une structure unique ayant des unités d'anhydroglucose à liaisons en position 4, en position 6 et en position 4,6 ou, en présence d'accepteurs appropriés, des oligosaccharides. Selon la présente invention, des lactobacilli capables de produire ce glucane à l'aide de cette nouvelle glucosyltransférase peuvent être utilisés comme un probiotique ou un symbiotique.
