A B S T R A C T A meat emulsion product is suitable for use as a partial or complete replacement for more expensive natural meat chunks in both human foods and animal foods. A process for producing the meat emulsion product takes place under conditions which result in the production of a layered, non-expanded product in the form of chunks or pieces which simulate natural meat chunks in texture, appearance and consistency. The process includes comminuting a mix of meat material, such as meat and/or meat by-products under conditions which form a meat emulsion.
