The invention relates to cosmetic and pharmaceutical creams in the form of an oil-in-water emulsion containing at least one polar oil as the oil component, said polar oil having an interfacial tension (.gamma.1) with water of less than 30 mN/m at 25 ~C, and at least one plant protein as the emulsifier, a 1 wt % aqueous solution of said plant protein having an interfacial tension (.gamma.2) with the oil component at 25 ~C which is less than the interfacial tension .gamma.1 between oil and water. Proteins or protein-containing meals consisting of oats, wheat or peas are preferred as emulsifiers, whilst the oil components preferably belong to the group of C8-C22 fatty acid esters of monovalent or polyvalent C2-C6 alkanols or C8-C22 alkanol esters of monovalent or polyvalent C2-C6 hydroxycarboxylic acids.
L'invention concerne des crèmes cosmétiques et pharmaceutiques sous forme d'une émulsion huile dans eau, contenant comme constituant lipidique au moins une huile polaire, dont la tension interfaciale par rapport à l'eau à 25 ·C (.gamma.?1¿) est inférieure à 30 mN/m, et contenant comme émulsionnant au moins une protéine végétale, dont la solution à 1 % en poids présente par rapport au constituant lipidique une tension interfaciale à 25 ·C (.gamma.?2¿) qui est inférieure à la tension interfaciale .gamma.?1¿ entre l'huile et l'eau. De préférence, les émulsifiants utilisés sont des protéines ou des farines protéiniques constituées d'avoine, de blé ou de pois. Les constituants lipidiques appartiennent de préférence au groupe des esters d'acides gras C¿8?-C¿22? d'alcanols C¿2?-C¿6? monovalents ou polyvalents, ou des esters d'alcanols C¿8?-C¿22? d'acides hydroxycarboxyliques C¿2?-C¿6? monovalents ou polyvalents.
