Novel, stable, cold water-dispersible, liquid or pulverous preparations of fat-soluble substances which contain fish gelatine as the protective colloid are described. The fat-soluble substances embrace especially the fat-soluble vitamins A, D, E and K, carotinoids, polyunsaturated fatty acids and other substances useful in human or animal nutrition. The fish gelatine stabilizes such active substances and enables them to be optimally resorbed and rendered water-dispersible for use in the final preparations, e.g. foodstuffs or animal feeds. Also embraced by the invention is the process of manufacturing the liquid or pulverous preparations involving preparing an aqueous emulsion of the active substance and fish gelatine and, as appropriate, converting it into a dry powder, e.g. by spray drying.
