The present invention relates to a stable and liquid olein fraction wherein less than 8.6% of the TAG species of said olein fraction have the general formula SMS and at least 26% of TAG species of said olein fraction have the general formula SMM, wherein S represents a saturated fatty acid and M represents a monoenoic fatty acid, which olein fraction is obtainable by fractionation of a high oleic high saturated sunflower oil; and collecting the liquid fraction. The invention further relates to a method for preparation of a stable and liquid olein fraction by low temperature fractionation of a high oleic, high saturated sunflower oil.
La présente invention concerne une fraction d'oléine liquide et stable dans laquelle moins de 8,6% des types de TAG (Triacylglycérol) sont représentés par la formule générale SMS et où au moins 26% des types de TAG de ladite fraction sont représentés par la formule générale SMM, dans laquelle S représente un acide gras saturé et M un acide gras monoénoïque. Cette fraction d'oléine peut être obtenue par fractionnement d'une huile de tournesol hautement oléique et fortement saturée; et par collecte de la fraction liquide. De plus, l'invention concerne un procédé de préparation d'une fraction d'oléine stable et liquide par fractionnement à basse température d'une huile de tournesol hautement oléique et fortement saturée.
