A liquid shortening emulsifier system is prepared for incorporation into chemically leavened baking formulations in order to provide baked products exhibiting enhanced moistness, both initially and when subjected to normal storage conditions. The liquid shortening emulsifier system includes, in addition to vegetable oil components, a combination of propylene glycol monoesters and of polycarboxylic acid esters of mono-diglycerides, particularly diacetyl tartaric acid esters of mono-diglycerides, succinic acid esters of mono-diglycerides, and combinations thereof.
Système émulsifiant liquide de type shortening, préparé en vue d'être incorporé dans des formulations de cuisson levées chimiquement; on obtient ainsi des produits cuits présentant une teneur améliorée en eau, tant au départ qu'après des conditions normales d'entreposage. Le système renferme, en plus de constituants d'huiles végétales, une combinaison de monoesters de propylèneglycol et d'esters d'acides polycarboxyliques et de mono-diglycérides, notamment des esters tartriques de mono-diglycérides diacétylés, des esters d'acide succinique et de mono-diglycérides, ainsi que leurs mélanges.
