Long-life fresh pasta products and producing method thereof are disclosed. The present pasta products are produced from wheat flours having ash content of 0.45 wt.% or less, preferably 0.40 wt.% or less. Then, the present long-life fresh pasta products have little sourness and improved flavor and texture.

Cette invention a trait à des pâtes fraîches longue durée et au procédé correspondant de fabrication. Ces pâtes sont produites à l'aide de farines de blé à teneur en cendre inférieure ou égale à 0,45 % en pourcentage pondéral, de préférence inférieure ou égale à 0,40 %. De ce fait, les pâtes de cette invention n'ont qu'une faible acidité pour une saveur renforcée et une texture améliorée.
