LOW CALORIE MEAT PRODUCT WITH OIL PACKED APPEARANCE AND FLAVOR Abstract of the Disclosure A canned or retorted meat product, preferably a fish product such as tuna, is disclosed which has a caloric content com- parable to tuna packed in water, yet has the desirable appearance, flavor, and mouthfeel characteristics of tuna packed in an edible oil. The canned fish product having a low caloric level comprises fish and an added aqueous emulsion comprising water, an edible oil, together with an emulsifying amount of a retort stable hydrophyllic colloid.
