ABSTRACT OF THE DISCLOSURE The present invention relates to a process for producing foods and drinks sweetened with sugar sweeteners. More particularly, the present process is based on the invention that low-cariogenic and/or anti-caries foods and drinks are obtainable by using an aldosylfructoside obtained by subjecting a substrate solution containing aldose, and sucrose and/or raffinose to the action of levansucrase (E.C. 2.4.1.10). Also, the process is based on the promising finding that said aldosylfructoside is usable in the production of all products which are used orally as well as foods and drinks in general.
