A salted low-fat spread having a fat content of 40 wt.% or lower, prepared by using an emulsifying agent selected so as to provide such demulsibility that the conductivity increases to 0.1 mS/cm or higher within 300 seconds at around 36 ~C. The obtained salted low-fat spread has satisfactory meltability in the mouth, is smoothly demulsified in the mouth to spread a satisfactory flavor, and is free from problems concerning production processes.
L'invention concerne un produit à tartiner salé à faible teneur en matières grasses, dont la teneur en matière grasses est inférieure ou égale à 40 % en poids. On prépare ce produit en utilisant un agent émulsifiant dont la désémulsification est telle que la conductivité augmente à 0,1 mS/cm ou plus en 300 secondes, à environ 36 ·C. Le produit à tartiner salé à faible teneur en matières grasses ainsi obtenu fond donc aisément dans la bouche et dégage un goût agréable. Le procédé de fabrication de ce produit est en outre simplifié.
