A novel process and apparatus is disclosed for producing potato chip products having less than twenty-five weight percent oil based on the total weight of an unseasoned chip. The process requires parfrying potato slices, deoiling and partially dehydrating the slices with superheated steam and then further dehydrating the slices.
Il s'agit d'un procédé et d'un appareillage inédits pour obtenir des produits de pommes de terre frites minces (chips) présentant moins de vingt-cinq pour cent en masse d'huile par rapport à la masse totale d'une croustille non assaisonnée. Le procédé nécessite la friture égale des tranches de pomme de terre, le déshuilage et la déshydratation partielle des tranches par vapeur surchauffée, puis une autre déshydratation des tranches.
