This invention relates to a low pressure distillation apparatus and method, that is distillation apparatus in which evaporation takes place at sub-atmospheric pressures. The apparatus comprises an evaporation chamber having a feed liquid inlet port, a concentrated liquid outlet port, and a vapour outlet port, the vapour outlet port being in communication with a vapour entrainment device situated within a distillate tank. The vapour entrainment device preferably comprises a rotating impeller pump which is capable of reducing the pressure in the evaporation chamber to the working pressure, and then drawing off vapour boiled from the solution in the evaporation chamber, entraining it and condensing it in a stream of distillate, such that it releases its latent heat of condensation to the distillate. In a further aspect the invention concerns a rotating impeller pump when used in a distillation tank of a distillation apparatus to entrain and condense distillate vapour in a stream of liquid distillate.
