Low SAFA puff pastry fats can be made from fat blends, comprising: 70-85 % liquid oil > 15 % (H2M +H3)-triglycerides which blend displays: SAFA < 50 % N35 < 35 N20: 15-40 S20 > 150 and which blend has total (C20 + C22)-content of > 1 %. H= saturated fatty acid C16 - C24 M= saturated fatty acid C6 - C14
Il est possible de préparer des matières grasses de pâte feuilletée contenant peu d'acides gras saturés (SAFA) à partir de mélanges de matières grasses, comprenant : de 70 à 85 % d'huile liquide; >15 % de (H2M +H3)-triglycérides. Les caractéristiques du mélange sont les suivantes : SAFA < 50 %; N35 < 35; N20 : 15-40; S20 > 150 et teneur totale en (C20 + C22) > 1 %. H = acide gras saturé en C16 - C24 et M= acide gras saturé en C6 - C14.
