Food products having high dietary fiber content and unexpected organoleptic characteristics, the invention takes the form of a substantially solid or semi-solid substrate formed primarily of dietary fiber soaked in or permeated by a flavorful material such as a natural juice, liquefied or pureed fruit or the like, the combination then being at least partially lyophilized to a solid or semi-solid consistency. The concentration of the natural juice or other flavorful material within a framework or lattice provided by the dietary fiber causes a burst of flavor to be experienced when eaten. While the lyophilized substrate can preferably be consumed as a bar-like comestible with or without the addition of other materials such as coatings, fillers and the like, the invention contemplates the formation of the substrate as flakes, as a cookie, as a candy such as a semi-soft roll or sheet consumed flat or as a rolled sheet among other forms. In all forms, the inventive food product provides healthful benefits known to be associated with desirable intakes of dietary fiber and tasteful enjoyment due to taste characteristics not previously present in food products of high fiber levels. The invention further relates to the methodology for preparation of the present food products.

Produits alimentaires ayant une forte teneur en fibres et des propriétés organoleptiques inattendues, l'invention prenant la forme d'un support solide ou semi-solide constitué principalement de fibres alimentaires imprégnées d'une substance aromatisante telle que du jus naturel, des fruits réduits en purée ou autre substance semblable, la combinaison étant ensuite au moins partiellement lyophilisée à une consistance solide ou semi-solide. La concentration du jus naturel ou autre substance aromatisante dans la structure de support fournie par la fibre alimentaire cause une explosion de saveur qu'on expérimente quand on mange le produit. Le support lyophilisé peut être consommé de préférence sous forme de tablette comestible avec ou sans ajout d'autres matières de revêtement, de charge et autres, mais l'invention prévoit la formation d'un support ayant la forme de flocons, de biscuits, de bonbons pouvant se présenter en rouleau ou en feuille, consommée plate ou en feuille roulée, entre autres formes. Sous toutes ses formes, le produit alimentaire proposé apporte des avantages de santé que l'on sait être associés avec la consommation souhaitable de fibres alimentaires et un agrément gustatif lié aux propriétés de goût qui n'étaient pas présentes jusque-là dans les produits alimentaires à haute teneur en fibres. L'invention porte aussi sur la méthodologie utilisée pour préparer lesdits produits alimentaires.
