One aspect of the disclosure herein contemplates a composite film comprising lysozyme incorporated within a chitosan polymer matrix. In another aspect, there is disclosed a film that includes chitosan, and about 10 to about 200 weight percent lysozyme, based on the weight of the chitosan. Also disclosed is a method for making a film that includes dissolving or dispersing chitosan and lysozyme in an aqueous medium resulting in a film-forming solution or dispersion; applying the film-forming solution or dispersion to a substrate surface; and converting the film-forming solution or dispersion into a film. In a particularly useful application, the film is an antimicrobial protectant for a food article.
La présente invention concerne, dans l'un de ses modes de réalisation, un film composite contenant un lysozyme incorporé dans une matrice polymère chitosane. Dans un autre mode de réalisation, l'invention porte sur un film à chitosane avec une proportion de lysozyme comprise environ entre 10 et 200 en pourcentage de poids, par rapport au poids de chitosane. L'invention a également trait à un procédé de production de film qui consiste à : dissoudre ou disperser le chitosane et le lysozyme dans un milieu aqueux pour donner une solution ou une dispersion filmogène ; appliquer la solution ou la dispersion filmogène sur une surface de substrat ; et convertir la solution ou la dispersion filmogène en film. Selon une application particulièrement utile, le film apporte une protection antimicrobienne à un produit alimentaire.
