A machine for cutting away undesired tissue (VP), e.g. fat tissuefrom fish fillets (F), said undesired tissue (VP) extending substantially in one main direction e.g. in the longitudinal directionof a fish fillet, comprises a rotary freezing drum (7) for freezing fillets (F) thereto in order to retain the fillets while a knife (18) cuts a fish meat slice (FS) loose from the freezing drum (7), a conveyor (3) being adapted to supply fillets (F) to the freezing drum (7). The freezing drum (7) is formed with at least one circumferential groove (7a) receiving said fat tissue portion (VP), an underlying conveyor (3), through the shape, design and suspension thereof, being adapted to press said fat tissue portion (VP) into the groove (7a) within which the fat tissue portion (VP) freezes and, thus, is retained, withdrawn from the drum mantle face (7') when the knife (18) cuts loose a fish slice (FS) freed from fat tissue.
Cette invention se rapporte à une machine pour découper les tissus non désirés (VP), par exemple les tissus gras sur les filets de poissons (F), ces tissus non désirés (VP) s'étendant essentiellement dans une seule direction principale, par exemple dans le sens de la longueur d'un filet de poissons. A cet effet, cette machine comprend un tambour de congélation rotatif (7) qui sert à fixer les filets (F) contre lui en les congelant, de façon à les maintenir en position fixe, pendant qu'un couteau (18) découpe une tranche de chair de poisson (FS) en la détachant du tambour de congélation (7), une bande transporteuse (3) étant prévue pour acheminer les filets (F) jusqu'au tambour de congélation (7). Ce tambour de congélation (7) comporte au moins une fente circonférentielle (7a) destinée à recevoir la partie tissus gras (VP), une bande transporteuse sous-jacente (3) étant prévue avec une forme, une conception et un mode de suspension qui font qu'elle vient presser ladite partie tissus gras (VP) dans la fente (7a) dans laquelle la partie tissus gras (VP) est congelée et, ainsi, retenue, en étant retirée de la face (7') du manteau du tambour, pendant que le couteau (18) détache une tranche de chair de poisson (FS) débarrassée de ses tissus gras.
