ABSTRACT The invention includes a method and a machine for cutting a nape mus- cle 12 of a fish from a front-part 1 and removing the fish skin 13 from the same, after socalled "cutting" the fish into two parts, front part 1 and rear part. The method includes moving the front part 1 along a fixed, straight track 21 to vertical knives 29, which cut vertical cuts at each side of the the spinal crest 8, and to horizontal fixed knives 15, a kind of a plough (fig. 7 to 9), which is fixed to the shaft housing 31 of the knife shaft 30. The plough knife 15 cuts almost horizontal cuts 10 from the spine 5 to the skin 13, but not farther. The uttermost part of the plough, the plough spade 17 is not sharp and tears the nape muscle 12 from the skin 13, when the skin is pulled forwards through a gap be- tween the plough spade 17 and the sliding table 18 below, whereas the nape muscle 12 is retained by the uttermost part of the plough, the plough spade 17. The machine thus delivers the nape muscles 12 with- out bones and without skin. This includes, that the machine cuts the horizontal cut 10 opposite the bones and simultaneously removes the skin from the nape muscle 12, with a tool including a plough 15,16,17 for the flesh and a gap 20 for the skin 13, where the skin 13 is pulled through the gap 20, while the plough spade 17 retains the nape muscle 12 and turns it over sidewards. For different sizes of fish the cutting unit is fixed into arms forming a parallelogram. A more simple type cuts the nape muscles 12, but does not remove the skin.
