ABSTRACT OF THE DISCLOSURE A machine for severing the meat adhering to bones by pressing the bones in a compressing chamber having a vertical axis as a compressing piston which can be raised in the compressing chamber. the compressing chamber is, during pressing operation, closed at the top by a cross-piece swivellable around a vertical axis and absorbing the compression pressure. This cross-piece can, for this purpose, be locked with its one end on a column. The cross-piece is swivellably mounted around another column located at the other end of the cross piece and is a single part with a protrusion provided with a conical mantle surface.
