The invention is a low malt beverage that possesses the physical and organoleptic attributes that are familiar to and desired by the consumer of malt beverages and a method for its preparation. The method comprises preparing a dried malt with reduced amylase activity and fermenting a mixture of this malt and adjunct that comprises 25 percent by weight or less total malt, preferably 5-25 % by weight total malt, to produce the low malt beverage.
Cette invention concerne une boisson maltée à faible teneur en malt qui possède les mêmes propriétés physiques et organoleptiques que les boissons maltées auxquelles le consommateur est habitué, ces propriétés étant celles que le consommateur recherche. L'invention concerne également le procédé de préparation d'une telle boisson, ledit procédé consistant à préparer un malt séché à activité réduite de type amylase et à faire fermenter un mélange de ce malt et d'un succédané comportant 25 % ou moins en poids de malt total, de préférence 5 à 25 % en poids de malt total, afin de produire la boisson à faible teneur en malt.
