MANUFACTURE OF CHEESE AND CURD ABSTRACT A process for the manufacture of curd and cheese from a milk retentate which is fermented and evaporated. The fermented retentate is maintained in a quiescent condition at above about 50 percent total solids so as to form a curd. The curd is collected without damage to the curd structure and may be pressed in a conventional manner to form cheese.
