ABSTRACT OF THE DISCLOSURE The invention relates to a process for manufacturing ready-to-eat rice. The process consists of the steps of soaking rice grains in water, gelatinizing the soaked rice grains, and pressing the gelatinized rice grains. The gelatinized rice grains can then be processed in edible oil, in which case the process includes the step of deoiling the processed grains. Preferably, the moisture content of the soaked grains is re- duced to 8 - 25% before the gelatinizing step. The pressing step may be performed by forcing the grains through the slit between two rolls of a roller.
