Disclosed is a mayonnaise base which is mixed with eggs by consumers to give mayonnaise. The mayonnaise base consists indispensably of vegetable oil, vinegar and emulsifier (except egg yolk) along with other seasonings (except vinegar) and spices, and is stored in an oxygen-free container. The mayonnaise base is mixed with fresh eggs by consumers to give mayonnaise with ease. In accordance with the consumers' request, either whole eggs or only egg yolk or albumen can be added to the mayonnaise base.

L'invention concerne un prémélange pour mayonnaise permettant à un consommateur de préparer une mayonnaise par addition d'un oeuf ou d'un constituant de celui-ci et agitation du mélange obtenu. Le prémélange selon l'invention comprend une huile végétale, un vinaigre alimentaire, un agent émulsifiant, autre que le jaune d'oeuf, des assaisonnements (autres que les vinaigres alimentaires), et des épices, comme composants principaux, et il est stocké dans un récipient, dans des conditions exemptes d'oxygène. Les consommateurs peuvent facilement préparer une mayonnaise au moment où ils veulent la consommer, par addition au prémélange d'un oeuf frais entier ou bien du jaune ou du blanc de celui-ci, en fonction de leurs goûts.
