Mayonnaise-like foods prepared by mixing and emulsifying soybean milk, tofu, vinegar, seasonings, spics, emulsifiers and vegetable fats wherein the above- described soybean milk is a concentrated soybean milk having a Brix concentration of 20 to 40 or the above-described tofu is a concentrated tofu obtained by solidifying a concentrated soybean milk having a Brix concentration of 15 or above with a solidifying agent. Use of the concentrated soybean milk or the concentrated tofu makes it possible to obtain mayonnaise- like foods having a rich flavor and a smooth texture with relieved raw smell and bitter taste inherent to soybean.
L'invention concerne des aliments semblables à la mayonnaise préparés en mélangeant et en émulsionnant du lait de soja, du tofu, du vinaigre, des condiments, des épices, des émulsifiants et des graisses végétales. Le lait de soja décrit ci-dessus est un lait de soja concentré présentant une concentration Brix de 20 à 40, et le tofu décrit ci-dessus est un tofu concentré obtenu par solidification de lait de soja concentré présentant une concentration Brix de 15 ou plus à l'aide d'un agent de solidification. L'utilisation du lait de soja concentré ou du tofu concentré permet d'obtenir des aliments semblables à la mayonnaise riches en saveur et de texture lisse, l'odeur et le goût amer inhérents au soja étant sensiblement inexistants.
