Herein is disclosed a video image analysis (VIA) system for scoring characteristics predictive of palatability and yield of a meat animal carcass or cut. The VIA system provides for a video camera, a data processing unit for processing video image data, and an output device for output of processed data to the user. Also disclosed is a method for using the VIA system in predicting palatability and yield of a meat animal carcass or cut.
