A process and apparatus for the removal of ribs (15) from a carcass section (10) which contains a spine portion (11) and a number of ribs (15), comprises grasping a section of tissues (14) in the vicinity of the ventral extremities (17) of the ribs (15), pulling the grasped section of tissues (14) in a direction (A) transverse to the ribs and away from the ventral extremities (17) so that end regions (19) of the ribs (15) near the ventral extremities (17) are exposed, and restraining the exposed end regions (19) and further separating tissues attached to the ribs (15) so as to progressively expose the ribs along a major proportion of their lengths. Tissue attachments between the grasped section of tissues (41) and the ribs (15) at the ventral extremities (17) of the ribs where initial exposure of the ribs (15) is desired are first weakened by forming a cut (23) between the cartilage (18) attached at the ventral extremity (17) of each rib (15) and the respective ventral extremity (17) of the rib. A lateral restraint (40) engages the carcass section (10) and moves with a rolling contact along the carcass section towards the spine portion (11) during progressive exposure of the ribs.

Procédé et appareil permettant d'enlever les côtes (15) d'une section de carcasse (10) qui comprend une partie de colonne vertébrale (11) et plusieurs côtes (15). Ledit procédé consiste à saisir une section de tissus (14) à proximité des extrémités antérieures (17) des côtes (15), à tirer cette section de tissus (14) dans un sens transversal (A) par rapport aux côtes et à l'opposé des extrémités antérieures (17), de sorte que les zones terminales (19) des côtes (17) à proximité des extrémités antérieures (17) soient exposées, à retenir les régions terminales exposées (19) et à séparer encore les tissus fixés aux côtes (15) de sorte que les côtes soient progressivement exposées sur la majeure partie de leur longueur. Les attaches des tissus entre la section de tissus (41) saisie et les côtes (15) au niveau des extrémités antérieures, à l'endroit où l'on désire exposer initialement les côtes, sont d'abord affaiblies par formation d'une entaille (23) entre le cartilage fixé au niveau de l'extrémité antérieure (17) de chaque côte (15) et l'extrémité antérieure respective (17) de la côte. Un élément de retenue latéral (40) vient en contact avec la section de carcasse (10) et se déplace en roulant le long de la section de carcasse en direction de la section de colonne vertébrale (11), pendant l'exposition progressive des côtes.
