ABSTRACT A meat processing machine for tenderizing or flattening meat cuts has a meat supporting surface to support a cut of meat during operation of the machine and a press plate having teeth on the lower surface thereof for affecting tenderizing of or flattening the cut of meat, this plate extending parallel to and above the supporting surface. There are power means for reciprocating the press plate towards and away from the support surface. Plunger rods extend vertically on opposite sides of the supporting surface and are connected to the press plate. Guide housings guide the reciprocal movement of these rods. There are two connecting rods located below the meat supporting surface and operatively connected to the bottom end of the plunger rods. A crankshaft is attached to the connecting rods and a motor rotates this crankshaft. There are also means for adjusting the position of the two connecting rods and the crankshaft and thereby adjusting the reciprocal movement of the press plate. The adjusting mechanism includes a moveable support member on which the crankshaft is rotatably mounted and a threaded adjusting rod connected at one end to a suitable fixed support.
