An apparatus for processing meat comprising an endless conveyor having an infeed end and a discharge end with the conveyor passing through a housing or tank which is partially filled with agitated water. Pieces of meat are conveyed by the conveyor through the agitated water to remove foreign particles therefrom. The foreign particles are recirculated through a filter and a water chiller with the chilled and filtered water then being returned to the tank. Excess water is blown from the pieces of meat after the pieces of meat have been conveyed through the agitated water. The method of processing the meat is also described.

Dispositif de transformation de la viande comprenant un transporteur circulaire doté d'une extrémité d'alimentation et d'une sortie. Le transporteur traverse un logement ou un réservoir partiellement rempli d'eau en mouvement. Les morceaux de viande sont transportés dans l'eau en mouvement au moyen du transporteur afin d'en retirer les particules étrangères. Les particules étrangères sont retirées au moyen d'un filtre et d'un refroidisseur d'eau, l'eau refroidie et filtrée étant renvoyée dans le réservoir. L'excès d'eau est retiré des morceaux de viande par ventilation après leur transport dans l'eau en mouvement. La méthode de transformation de la viande est également décrite.
